Environment week - Day 2: Avocadopizza
It’s perfectly fine to use store-bought dough, but if you wanna try to make it at home, here is a great recipe:
300 grams all-purpose flour
3 tablespoons wheat bran
1 teaspoon (sea) salt
1 teaspoon dry yeast
Approx. 2 dl lukewarm water
Avocadosauce:
1-2 cloves of garlic, shredded
150 ml crème fraiche
1 medium sized avocado
Salt and pepper to taste
For extra flavour add 30 grams of finely grated parmesan cheese
Toppings:
1 medium-sized broccoli
1/2 red onion thinly sliced
200 grams feta cheese (can be replaced with fresh mozzarella)
You can also add some regular shredded cheese
A good handful of rocket.
For extra flavour add some basil on top.
Instructions:
Preheat the oven to 250 degrees Celsius (about 480 degrees fahrenheit).
Homemade dough:
Mix flour and wheat bran together with salt and dry yeast. Add enough lukewarm water until you have a soft and sticky dough. I make the dough with a stand mixer and add enough water that the dough is coming together. It’s better to add too much water, rather than not enough, you can always add more flour later if needed. Let the dough rest until it’s doubled in size. You can always make the dough in the morning and leave it to rise in the fridge. Take the dough out of the fridge when you get home from work, pour it out onto a surface covered with flour, cover it up and let the dough come up to room temperature.
Cut the broccoli tops in half and slice the red onion in thin wedges.
Make the avocadosauce: Put garlic, crème fraiche and avocado (and optionally parmesan). If you want a smooth sauce use an immersion blender, use a fork if you like a chunkier texture. Season with salt and pepper to taste.
Spread the sauce on the pizza dough, and add broccoli, onions and cheese.
Cook it in the oven for about 10 minutes and top it with fresh rocket, fresh basil, freshly ground black pepper and some olive oil. Enjoy!
