Environment week - Day 4: One pot pasta

Try our delicious, easy-to-make one pot pasta!

This is great if you only have a small cooktop, as you only need to use a single pan or pot, and it’s awesome not having much to clean after you cook. You can use any vegetables you like, those in the recipe is merely a suggestion.

Ingredients:

1 teaspoon olive oil
2 cloves of garlic
1 onion, finely chopped
2 squash, diced
1 bell pepper diced
1 broccoli, chopped
1 small can of corn
800 grams of canned, crushed tomatoes.
2 tablespoons tomato purée
375 ml vegetable broth
1 teaspoon Italian herbs, basil or a mix.
½ teaspoon of chili powder or ½ fresh chili
250 grams pasta, e.g. penne or ziti
Cheese for topping


Instructions:

Heat oil in a large pot on medium heat, and fry onions and garlic for a few minutes. Turn up the heat slightly and add squash and bell pepper. Let it cook for about 2 minutes. Add everything else besides pasta and broccoli and bring to a boil. Once it’s boiling, turn down the heat and add pasta and broccoli. Let it simmer with lid on for about 10 minutes, then remove the lid and simmer for 3-4 minutes while you stir it. When most of the liquids are absorbed by the pasta, it’s ready and you can top it with as much cheese as you like.
