Environment week - Day 5: Sweet potato taco

A vegetarian taco with spicy roasted sweet potatoes, mango salsa and lots of other deliciousness!

Ingredients (2 servings):

Spicy roasted sweet potatoes
3 medium-sized sweet potatoes
1 teaspoon coriander seeds, crushed
½ teaspoon fennel seeds, crushed
2 teaspoons cumin
½ teaspoon of red pepper flakes or chili powder
Salt
Oil


Pico de gallo:
3 tomatoes
½ red onion
1 lime
Fresh coriander

 
Guacamole:
2 avocados
½ lime
1 clove garlic
½ red chili

 
Mango salsa:
1 mango
½ red chili
½ lime
Fresh coriander
Salt

 
Serve with:
8 corn tortillas
Red cabbage, finely shredded

 
Instructions:

Spicy roasted sweet potatoes:

Preheat the oven to 210 degrees Celsius (or about 410 degrees Fahrenheit). Peel and dice the sweet potatoes (try and make sure the cubes are about the same size, so they’ll cook more evenly) and put them in a bowl. Sprinkle over coriander seeds, fennel, cumin, chili flakes or powder and salt and drizzle with oil. Mix it all together, pour it out on a baking tray and put them in the oven. Let the sweet potatoes bake for about 25 minutes, or until tender and golden.

 

Pico de gallo:

Half the tomatoes and core them with a spoon, then chop the flesh of the tomatoes and put them in a bowl. Finely chop the red onion and some coriander. Pour over the juice of one lime and mix well.

 
Guacamole:

Mash the avocados in a bowl. Finely chop the garlic and chili and add it to the bowl along with the avocado. Pour over the juice of half a lime and mix well.

 

Mango salsa:

Dice one mango (this is an art in itself, so take a look here if you need a few tips: https://www.youtube.com/watch?v=yE0NGXZ_HBs). Cut the chili in half and remove the seeds with a spoon, then finely chop it. Put the chili and a handful of coriander together with the mango in a bowl. Pour over juice of half a lime. Add a pinch of salt. Mix the whole thing together using an immersion blender.

Serving suggestions for pico de gallo, guacamole and mango salsa: When you chop vegetables and herbs, put some aside and sprinkle it on top at the end. It will look really appetizing and will give people an idea of the ingredients 😊

Finely shred the red cabbage and heat the corn tortillas in the oven real quick. Buen provecho!
